Adam Rawson has since departed Pachamama, he formerly of White Rabbits in Dalston, who beat 14 other entries in a professional chef burger contest including that from the previous year’s champion, Tim Anderson at Nanban. Adam brought his winning recipe is a beef “Pan Con Chicharron”, an aged beef patty, demi brioche bun, pork belly chicharron, aji Amarillo mayonnaise, mature cheddar and avocado.
The pork belly chicharron and aji Amarillo mayonnaise are a devine combination, Oozing with flavour on every bite. The patty (served medium) is juicy and tender and all the flavours going on really help compliment it.
It isn’t your typical burger joint, however there is some seriously good burger cooking going at Pachamama and is great if you want something a little different.
